Homemade Pizza Bagels

Today I wanted to share an idea for a quick lunch the hubby and I enjoyed recently.  After making lasagna for my husband's birthday a little over a week ago, I had some extra meat sauce hanging out in the freezer to use.  There wasn't quite enough sauce left for a pasta dinner, so I decided to use mine in another way.  I had some delicious Tuscan herb bagels on hand and I couldn't resist the urge to whip up some grown up Homemade Pizza Bagels for lunch one day.

Our Homemade Pizza Bagels consisted of a Tuscan Herb bagel base topped with leftover homemade meat sauce, a slice of mozzarella cheese and a sprinkle of grated parmesan.  A divine combination!

This "recipe" is more an idea than anything else.  Just use what you have on hand and make these your own.  I topped our bagels with the sauce and cheese, baked them briefly and finished them under the broiler to brown the cheese.  The bagels absorbed the sauce and became a little soft, so next time I'll try starting with toasted bagels (I've suggested that change in the "recipe" below).  You can keep these pretty plain like we did, or add pepperoni or veggies or any other toppings you like!

Homemade Pizza Bagels
makes 2 bagel halves, serves 1

1 bagel, halved (I used Tuscan Herb from Meijer)
scant 1/2 cup pasta sauce, pizza sauce, etc. (I used leftover homemade meat sauce from this recipe)
2 slices of mozzarella cheese
2 tablespoons grated parmesan

Preheat the oven to 350°.  Line a baking sheet with parchment paper or aluminum foil to make cleanup easier.

Lightly toast your bagel halves.  If your sauce is cold, warm on the stove or in the microwave.  Once your ingredients are ready, begin to assemble your Pizza Bagels: top each bagel half with 3-4 tablespoons of sauce, then a slice of mozzarella and a sprinkle of parmesan.

Bake in the preheated oven for 10 minutes, then turn your oven to broil and heat your bagels ~5 inches from the broiler for a minute or two, or until the cheese has begun to lightly brown.  Remove from the oven, let cool for a minute, then enjoy!

  2. I was looking up reviews on the Meijer Tuscan Herb bagels (which I'm currently obsessed with!) and came across your blog. I had already been thinking about doing this, but now that I've seen your delicious pictures and easy recipe, I'm definitely giving it a try! Thanks for the post =)
