Golden Grahams S'more Bars

Hubby and I held our second backyard movie night of the summer last Friday.  We watched Moonrise Kingdom, shared great company, and enjoyed some yummy snacks: among them these Golden Grahams S'more Bars and Maple-Bacon Kettle Corn (click here for that recipe).

In an effort to keep our backyard movie nights fairly stress-free, I've decided to limit myself to making no more than one or two homemade dishes for each showing and restricting myself to recipes that can be made in under an hour.  I'm notorious for going overboard and overexerting myself when hosting, so this is a much-needed guideline to save my sanity.

These Golden Grahams S'more Bars are very similar in preparation to the classic Rice Krispie Treat which means they're incredibly simple and fool-proof to prepare.  These have all the flavor of the classic campfire s'more without the mess and need for a fire.  I thought they made a fun and festive treat for the evening and everyone loved them.  If you're looking for a quick and easy dessert to share at a picnic, potluck, camping trip (really any occasion) this summer, I definitely recommend these.

Golden Grahams S'more Bars

yields 24 bars

10.5 oz bag of miniature marshmallows
1 1/2 cups milk chocolate chips
5 tablespoons unsalted butter
1/4 cup light corn syrup
1 teaspoon vanilla extract
8 cups Golden Grahams cereal

Grease a 9x13 pan with butter and line with parchment paper for easy removal.  Reserve 1 cup of marshmallows.

In a large saucepan, melt the chocolate chips, butter, corn syrup and remaining marshmallows over low heat.  Stir often, until completely melted.  Remove from the heat and stir in the vanilla.

Pour cereal into the saucepan; stir until the cereal is evenly coated in the melted chocolate mixture.  Stir in the reserved 1 cup of marshmallows.

With a buttered spoon or spatula, press the mixture into the prepared pan.  Allow the bars to cool at room temperature for 1 hour, or until firm and completely set.  Cut and serve.

*We found that these taste best when eaten within two days.
